Development of Protocol of Good Practices for The Training Of Teachers In Milk Properties In The Municipality Of Caranaíba, MG

This work aimed to evaluate the hygienic-sanitary conditions of 54 rural properties and the knowledge of milkers about milk-borne diseases to guide them on their prophylaxis. In each property, a visual inspection was carried out and a questionnaire was applied to identify critical points to be attacked in Good Practice protocols. All farms investigated in the study presented hygienic-sanitary flaws. Of the total respondents, 43% said that the consumption of milk can cause diseases, but most of them were unable to name two (86.05%). Among those who stated that the consumption of this food can cause problems, 23.26% cited Brucellosis followed by allergy; 11.63%, food poisoning and diarrhea, 6.98% respectively; tuberculosis and worms, 2.33% each. Regarding preventive measures, 63% reported knowing them; however the majority, 95.24%, could not name three of them. The fact that 70% of the interviewees are poorly educated may contribute to the non-implementation of prophylaxis protocols, thus contributing to the production of poor quality milk.Downloads
